Havlit is more than a name. It is a story.
The name is inspired by the Nordic long-tailed duck – a sea bird with an exclusive presence. Rare, captivating, and impossible to ignore once it appears over the fjord. That is exactly the feeling we want to give you. A visit to Havlit should stand out. An experience that is felt from the very first moment and stays with you long after the plates have been cleared.
The long-tailed duck is known for diving deep to find the very best. This reflects our approach in the kitchen. We carefully select our ingredients and work in depth with flavour, craftsmanship, and the overall experience. It is not about overpowering, but about refining.
Restaurant Havlit is located in a charming patrician villa from 1914 in Faaborg. Over the years, the house has lived many lives, and today it forms the setting for a new story. A gourmet restaurant with a strong ambition to become a gastronomic landmark on Funen.

Funen Star Chef as Head Chef
At the helm of gourmet restaurant Havlit is Thomas Pasfall – a renowned chef from Funen with a long and distinguished career.
Throughout his career, Thomas has worked in some of the most acclaimed kitchens in both Denmark and Germany. His time as owner and head chef at Restaurant Pasfall in Odense was recognised by the Michelin Guide Nordic Countries. He has made his mark on the Danish restaurant scene with critically acclaimed establishments such as Restaurant Grå Anden in Frederikshavn and Munkebo Kro, which was named Restaurant of the Year by Den Danske Spiseguide.
Thomas has also been awarded Chef of the Year in Denmark and honoured as Icon of the Year by Den Danske Spiseguide.
